Embracing the last few cozy days before spring arrives, this comforting broccoli soup is the perfect bowl to warm you up.
BROCCOLI SOUP WITH WALNUT OIL
Serves 4 - 6 | Prep: 15 min | Cook: 45 min

Ingredients:
450g of broccoli, cut into florets and stalks peeled and cut into small chunks
1 potato, peeled and cut into small chunks
2 Tbsp Walnut Oil, plus more for drizzling
1 onion, coarsely chopped
Coarse salt and freshly ground pepper
1 can reduced-sodium chicken broth
1-3 tsp fresh lemon juice
Handful arugula
Instructions:
Heat walnut oil in a large pot over medium heat. Add the onion, season with salt, and cook until softened (5–7 minutes).
Add broccoli, potato, broth, and enough water to cover (4–5 cups). Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
Blend the soup in batches until smooth, then return to the pot. Adjust consistency with water if needed.
Season with salt, pepper, and lemon juice. Garnish with arugula and a drizzle of walnut oil.
