Tzatziki
- ½ cup finely grated cucumber
- 1 cup thick whole milk Greek yogurt
- 1 tablespoon fresh lemon juice
- ½ tablespoon extra-virgin olive oil
- 1 garlic clove, grated
- ¼ teaspoon sea salt
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh mint, optional
Place the cucumber on a towel and gently squeeze out a bit of the excess water.
In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.
Whipped Feta Dip
- 200g block of feta cheese
- ¾ cup cottage cheese
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- ⅓ cup hot honey, or regular honey
- 2 tbsp crushed pistachios
- 1 tbsp minced chives
- 2 tbsp pomegranate arils, optional
Blend feta, cottage cheese, Italian seasoning, and olive oil until smooth. Spread, drizzle with honey, then top with pistachios, chives, and pomegranate before serving.
Goat Cheese & Beetroot
- 3 large beets, peeled and cut into 1 pieces
- 1 Tablespoon olive oil
- salt and pepper to taste
- 200g of goat cheese
- 1 Tablespoon honey
- 2 Tablespoons lemon juice
- 2 Tablespoons light cream cheese
- Salt and pepper to taste
Roast beets with olive oil, salt, and pepper until tender. Blend with goat cheese, cream cheese, honey, and lemon juice until smooth. Season to taste and serve.
Hummus Thyme
- Ready to eat hummus
- Olive oil
- Lemon juice
- Sprinkle some thymes
Spoon hummus into a bowl, drizzle with olive oil and lemon juice, then finish with a sprinkle of fresh thyme before serving.
